The Visionaries Behind the Magic
The dream of Serafina was brought to life by two Italian visionaries – Fabio Granato and Vittorio Assaf. Their shared passion for authentic Italian flavors and a desire to introduce them to the world led to the inception of Serafina. Their journey, which began as chefs and restaurateurs, has now culminated in establishing Serafina as a culinary landmark in Miami.

Ingredients
For over 25 years, Vittorio and Fabio have been visiting farms and their produce partners in Italy at least four times a year, ensuring consistent quality control of our key ingredients. During these visits, they hand-select and taste each ingredient, guaranteeing its authenticity and origin. We are proud to offer these fine, 100% Italian ingredients in all of our Serafina restaurants.

This high-quality extra virgin olive oil is cold-pressed in Arezzo, Tuscany, using the traditional ‘Mola’ method. With sustainable irrigation and hand-picked olives, its quality is guaranteed—making it one of the finest olive oils in Italy. Rich in polyphenols, antioxidants, and essential vitamins, it offers anti-aging, anti-inflammatory, and potential anti-cancer benefits. Used across a variety of dishes, it embodies both exceptional flavor and wellness.

Sourced from a family-owned farm in San Marzano, just south of Naples—one of the most fertile regions in Italy—these tomatoes are naturally irrigated by underground volcanic water from Mount Vesuvius. Handpicked at peak ripeness, they are rich in antioxidants like lycopene, potassium, and vitamins C and K. Their deep, robust flavor creates the perfect tomato sauce, used in many of our signature pasta dishes.

Produced in Parma by Paolo Gennari—an award-winning artisan known for crafting the finest 24–26 month aged Parmigiano Reggiano—this cheese is made from the milk of naturally grass-fed brown cows grazing on the hills around Parma. Rich in calcium, phosphorus, protein, and essential vitamins, it contains low cholesterol and is naturally lactose-free. Highly digestible and energy-rich, it supports bone strength while delivering exceptional flavor.

For the past 25 years, the Galloni family has been producing some of the finest prosciutto in Italy, crafted in Langhirano, Parma. For Serafina Reserve quality, they select only the best animals, exclusively raised on their own land. This lean, flavorful prosciutto is aged for two years, low in sodium, and rich in essential minerals like iron and zinc, along with vitamins B12, B6, and B1.

Produced by the Pivetti family in Bologna, this flour is made from naturally fertilized, non-GMO grains grown exclusively on their own land. Milled multiple times to achieve an ultra-fine texture, this 00 flour is exceptionally light—perfect for thin-crust pizza and gnocchi. With low starch and very low gluten content, it is easier to digest while delivering authentic Italian quality.

Our burrata is produced in Puglia, Italy, on the hillsides of Alberobello—world-renowned for its iconic Trulli houses. Crafted from the milk of grass-fed cows, this burrata is made irresistibly creamy using a time-honored method passed down through generations.

Traditionally produced in Modena, Italy for generations, this classic balsamic vinegar is aged in small oak barrels and contains no chemicals or preservatives. Rich in bioactive compounds, antioxidants, and antimicrobial properties, it’s the perfect complement to many of our dishes. De Nigris is widely regarded as one of the most legendary and esteemed balsamic producers in Italy.

Serafina proudly uses only truffle products crafted exclusively by the Di Nardo family of expert truffle hunters. Harvested in Alba and other select regions across Italy, these white truffles are a rare and prized delicacy. Naturally rich in vitamin D and protein, yet low in cholesterol and calories, they are best known for their extraordinary aroma—featured in a select few of Serafina’s most iconic dishes.
